This is an all-too-famliar sign declaring a potential minefield. You could say that Cambodia is a developing country. This is the usual laurel laid on the necks on the march out of poverty. A better appellation would be to call it a recovering country. With the empire in decline by the 14th century, Cambodia began a 500-year period of brutal pugilism, often on the receiving end, with its neighbors. Angkor was sacked by the Ayutthayans in the 15th century (who would later have their comeuppance when the Burmese would raze Ayutthaya to the ground in the 1767) and the Annamites (Vietnamese) to the East would prove a constant nuisance. The French colonized Cambodia in the 19th century, followed by the Americans carpet bombing the country for most of a decade, followed by the brutal rule, genocide, and later insurgency of the Khmer Rouge, and another war with the Vietnamese. Cambodia, as a material landscape, is pockmarked by the scars of these conflicts. Many of the temples at Angkor have bullet holes in them from skirmishes. More than that, Cambodia is still home to 3-6 million pieces of unexploded ordinance and countless more landmines that sit in wait. The story of Cambodia, the story of life as a Cambodian, is inexorably tied up the remnants of war.
Café de Olla is a traditional Mexican coffee, brewed in an earthen pot. To make a batch, you will need 3 oz piloncillo (dark brown sugar), 1⁄2 stick of cinnamon, 4 tbs of ground dark Mexican coffee, and 4 cups of water. Simmer the water, cinnamon, and sugar for about seven minutes, add coffee, and stir. Let it sit for a minute, strain, and enjoy! #leavewithastory
